The Stocklist: Tools and Appliances, Part 3

Pots and pans can be another one of those items that can get out of control and add serious clutter to a kitchen.  If you find two pots that have been sitting in the back of your cupboard for over three months it might be time to let them go. My basic stovetop options are pretty straight forward:

Frying Pan

If you are willing to make an investment I strongly suggest having a cast iron pan. There are versatile and can go from stovetop to oven without any worry.

There are various options for pots with built in steaming systems or steaming baskets that you can drop into any pot. I love steaming brassicas and other vegetables as it’s a healthier alternative to roasting or frying.

Basic Pot

One pot that will be the right size for cooking pasta, making sauces, and all the other in between size recipes that don’t require the big guns.

Soup Pot

This is “the big guns.” Something large enough for a big batch of whatever vegetable healing soup recipe your mother passed down to you. I love enameled cast iron pots that does double duty and can be used in the oven.

Silicone Baking Mat

Forget about having 500 sheets of wax paper rolled up in the back of a drawer somewhere. Two silicone baking mats will be all you ever need for your baking sheet endeavors.

Two Metal Baking Sheets

I prefer the rimmed ones for the times when my cookies overflow off the edges.

Muffin Pan

I love using these silicone pans because they double as frozen dessert trays. If I’m making a raw dessert I can stick this in the freezer and easily pop them out once they are frozen. If you like giant muffins these are also a great option. Already have metal cupcake pans? May I interest you in reusable cupcake liners?

Bread Pan

I also like these in the silicone variety for the same reason I love the silicone muffin tins. Easy to use, clean, and zero problem with getting the product out of the pan. Also – if you don’t own a bread pan, this recipe will change your mind. Sarah Britton is a mastermind.

Cooling Rack

For the times when I’m patient enough to not eat the goodies right off the baking sheet.
